Yummy Grapefruit Recipe

There are some mornings when I wake up and want something warm and cold for breakfast. This simple but yummy grapefruit recipe always hits the spot! Its easy to make and only takes a couple of ingredients. Plus you can totally mix it up and switch up the toppings.

This is also a fun recipe if you have family or friends over for the holidays. Its easy to cook and a delicious side dish to eggs and toast.

Ingredients:

1 Grapefruit - Cut in half

Coconut Oil Spray

1 Tsp Cinnamon

1/2 Cup of Granola

1/2 Cup of Blueberries (or berries of choice)

2 Tbsp of Coconut Whip Cream

Directions:

  1. Preheat oven to 375

  2. Cut the grapefruit in half.

  3. Spray each half with spritz of coconut oil spray.

  4. Sprinkle each half with cinnamon.

  5. Bake in the oven for 10-15 minutes until the top is golden brown.

  6. Top with granola, blueberries, and coconut whip cream.

  7. Enjoy :)

Alternatively you can drizzle with honey, maple syrup, agave syrup.. whichever type of topping you like. The possibilities are endless and the results are delicious! Enjoy this healthy breakfast recipe and share your choice of toppings in the comments!
