The Ultimate Thanksgiving Leftover LAB sandwich got it’s name from two men who are sadly no longer with us, Larry Blau and Andy Blau. I never met Larry, but Andy was my mom’s fiancé and he lost his battle pancreatic cancer in August. We are all still grieving his loss especially around the holidays, especially my mom. Andy made this sandwich for my mom each year and told her it was something his dad, Larry, made for him. It was originally named the LB Sandwich, but I’ve gone ahead and renamed it the LAB (Larry Andy Blau) Sandwich, because Andy should get credit for passing it along! My mom told me that the first year they were together they got into a fight on Thanksgiving, and the very next day Andy instead on seeing her to makeup and he made her this sandwich.

They say when someone passes they never truly leave you and I strongly believe that the more we can keep someone’s memory alive each day the more they remain with us. Andy was a great guy and told so many funny stories and had so many rich life experiences. I wish he were still here to enjoy the sandwich with us but for the rest of my life I will always make sure to enjoy one in his honor. Rest In Peace Andy and know how deeply loved you were.
